Right now on my Powerbook G4 I have 8 applications open, and these represent the most productive applications that I use at work.
In the order that they appear in the Dock:

Apple Mail
BBedit
Interarchy
DEVONthink
iTunes
Virtual PC
Aqua Data Studio
